Cinnamon Swirl Apple Fritter Bread 🍞🍎✨

Ingredients (Makes 1 loaf)
Batter:

1 ½ cups (180g) all-purpose flour *(or GF 1:1 blend + ½ tsp xanthan gum)*

1 ½ tsp baking powder

½ tsp salt

½ cup (115g) unsalted butter, softened

⅔ cup (130g) granulated sugar

2 large eggs, room temp
-
1 tsp vanilla extract
-
½ cup (120ml) milk (or almond milk)
Apple Filling:

2 medium apples, peeled & diced (Honeycrisp or Granny Smith)

2 tbsp butter
-
2 tbsp brown sugar
-
1 tsp cinnamon
Cinnamon Swirl:

¼ cup (50g) brown sugar
-
1 tbsp cinnamon
Glaze (Optional):
-
½ cup (60g) powdered sugar
-
1-2 tbsp milk
-
½ tsp vanilla extract
Instructions
1. Caramelize Apples:

Melt butter in a skillet. Add apples, brown sugar, and cinnamon. Cook 5 mins until soft. Set aside.
2. Make Batter:

Whisk flour, baking powder, and salt.

In another bowl, cream butter + sugar until fluffy. Add eggs + vanilla.

Alternate adding dry ingredients + milk until just combined.
3. Layer & Swirl:

Spread half the batter in a greased 9×5″ loaf pan.

Top with half the apples and sprinkle with half the cinnamon swirl mix.

Repeat layers, then swirl with a knife.
4. Bake:

At 350°F (175°C) for 50-60 mins (cover with foil if browning too fast).

Cool 15 mins before glazing.
