Cottage Cheese Egg Bites

Ingredients:

  • 6 large eggs
  • 1 cup cottage cheese
  • ½ cup shredded cheese (cheddar, mozzarella, or your favorite)
  • ½ cup diced veggies (spinach, bell peppers, mushrooms, etc.)
  • Salt and pepper, to taste
  • 1 teaspoon garlic powder (optional)
  • 1 teaspoon dried herbs (like basil or oregano) (optional)
  • Olive oil or non-stick spray for greasing

Instructions:

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick spray or lightly coat with olive oil.

2. Whisk the Eggs:

  • In a medium-sized bowl, whisk together the eggs and cottage cheese until smooth. The cottage cheese will add a creamy texture to the egg mixture.

3. Add the Veggies and Cheese:

  • Stir in the shredded cheese, diced veggies, and any additional seasonings like garlic powder and dried herbs. Season with salt and pepper to taste.

4. Pour into Muffin Tin:

  • Divide the egg mixture evenly into the muffin cups, filling each one about ¾ full. You should be able to make about 6-8 egg bites, depending on the size of your muffin tin.

5. Bake:

  • Bake the egg bites in the preheated oven for about 18-22 minutes, or until the eggs are fully set and slightly golden on top.

6. Cool and Serve:

  • Allow the egg bites to cool for a few minutes before removing them from the muffin tin.
  • Serve warm, or let them cool completely and store in the fridge for a quick breakfast or snack throughout the week.
