Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 2 cups rolled oats
  • 1 cup shredded sweetened coconut
  • 1 cup semisweet chocolate chips
  • 1 cup chopped pecans or walnuts (optional)

Instructions

1. Preheat the Oven:

  • Preheat your oven to 350°F (175°C).
  • Line baking sheets with parchment paper or silicone baking mats.

2. Mix the Wet Ingredients:

  1. In a large bowl, beat the butter, granulated sugar, and brown sugar together until light and fluffy (about 2-3 minutes).
  2. Add the eggs one at a time, mixing well after each addition.
  3. Stir in the vanilla extract.

3. Combine the Dry Ingredients:

  1. In a separate bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
  2. Gradually add the dry ingredients to the wet mixture, mixing just until combined.

4. Add the Mix-ins:

  1. Stir in the oats, coconut, chocolate chips, and nuts (if using) until evenly distributed.

5. Scoop and Shape:

  • Use a cookie scoop or spoon to drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.

6. Bake the Cookies:

  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown but the centers are still soft.
  • Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Tips

  • Customizations: Swap chocolate chips for white chocolate, butterscotch, or peanut butter chips. Add dried fruit like raisins or cranberries for a twist.
  • Storage: Store in an airtight container at room temperature for up to a week. These cookies also freeze well!
  • Chewier Cookies: Slightly underbake for a softer texture; they will firm up as they cool.
