Ingredients:

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/2 cup (120ml) orange juice
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (150g) fresh or frozen cranberries, roughly chopped
  • 1/2 cup (50g) chopped walnuts or pecans (optional)

Instructions:

  1. Prepare the Batter:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
    • In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, ground cinnamon, nutmeg, and cloves.
    • In a medium bowl, whisk together the orange juice, vegetable oil, eggs, and vanilla extract until well combined.
    • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
    • Gently fold in the chopped cranberries and nuts (if using).
  2. Bake:
    • Pour the batter into the prepared loaf pan and smooth the top with a spatula.
    • Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
    • Let the loaf cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  3. Serve:
    • Slice and serve the cranberry loaf warm or at room temperature. It can be enjoyed plain or with a spread of butter.
