- 1 1/2 cups (150g) fresh or frozen cranberries, roughly chopped
- 1/2 cup (50g) chopped walnuts or pecans (optional)
Instructions:
- Prepare the Batter:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5-inch loaf pan.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, ground cinnamon, nutmeg, and cloves.
- In a medium bowl, whisk together the orange juice, vegetable oil, eggs, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
- Gently fold in the chopped cranberries and nuts (if using).
- Bake:
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
