Ingredients:

  • 1 can (15.25 oz) whole kernel corn, drained
  • 1 can (14.75 oz) creamed corn
  • 1 package (8.5 oz) cornbread mix (Jiffy or similar)
  • 1 cup sour cream
  • 1/2 cup unsalted butter, melted
  • 1 cup shredded cheddar cheese

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 350°F (175°C).
  2. Prepare the Baking Dish:
    • Grease a 9×13 inch baking dish with butter or non-stick cooking spray.
  3. Mix Ingredients:
    • In a large bowl, combine the whole kernel corn, creamed corn, cornbread mix, sour cream, and melted butter. Mix well until all ingredients are thoroughly combined.
  4. Add Cheese:
    • Stir in half of the shredded cheddar cheese (1/2 cup) into the mixture.
  5. Transfer to Baking Dish:
    • Pour the mixture into the prepared baking dish, spreading it out evenly.
  6. Bake:
    • Bake in the preheated oven for 45 minutes or until the top is golden brown and the center is set.
  7. Add More Cheese:
    • Remove the casserole from the oven and sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.
  8. Final Bake:
    • Return the casserole to the oven and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly.
  9. Serve:
    • Allow the casserole to cool for a few minutes before serving. Serve warm.
