Ingredients:

  • 1 lb ground beef
  • 1 small onion, diced
  • 3 cups beef broth
  • 1 can (10.5 oz) condensed cheddar cheese soup
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1½ cups shredded cheddar cheese
  • 2½ cups uncooked pasta (e.g., rotini or penne)
  • ½ cup heavy cream
  • Salt and pepper to taste

Instructions:

  1. Cook Ground Beef: In a skillet, cook the ground beef and onion until browned. Drain excess grease.
  2. Combine in Crockpot: Add the beef mixture, beef broth, cheese soup, and diced tomatoes to the Crockpot. Stir well.
  3. Cook: Cover and cook on low for 3–4 hours.
  4. Add Pasta: Stir in the uncooked pasta and cook for an additional 30–45 minutes until tender.
  5. Finish with Cheese and Cream: Stir in the shredded cheddar cheese and heavy cream. Mix until creamy and heated through.
  6. Serve: Garnish with extra cheese if desired.
