Crispy Honey Lime Chicken Tostada Towers with Avocado Lime Drizzle 🌮🍯

A crunchy, sweet, spicy, and creamy fiesta in every bite! These stacked tostadas feature crispy honey-lime chicken, cool avocado drizzle, and fresh toppings for a showstopping meal.


Ingredients (Serves 4)

For the Honey Lime Chicken:

  • 1½ lbs (680g) boneless chicken thighs, cut into small chunks

  • 2 tbsp olive oil

  • 3 tbsp honey

  • Juice of 2 limes

  • 1½ tsp chili powder

  • 1 tsp garlic powder

  • Salt & black pepper to taste

  • ¼ cup cornstarch (for dredging)

  • Oil (for frying—avocado, vegetable, or canola)

For the Avocado Lime Drizzle:

  • 1 ripe avocado

  • ¼ cup sour cream (or Greek yogurt)

  • Juice of 1 lime

  • 1 garlic clove

  • 2 tbsp chopped cilantro

  • Salt to taste

  • Splash of water (to thin if needed)

Extras:

  • 8 crispy tostadas (store-bought or homemade)

  • Sliced jalapeños (optional, for heat)

  • Chopped cilantro (for garnish)

  • Cotija cheese (optional, for extra flavor)


Instructions

1. Marinate & Dredge the Chicken

  1. In a bowl, mix honey, lime juice, chili powder, garlic powder, salt, and pepper.

  2. Toss chicken chunks in the marinade and let sit 10-15 mins.

  3. Lightly coat chicken in cornstarch (shakes off excess).

2. Fry the Chicken

  1. Heat ½ inch of oil in a skillet over medium-high heat (350°F/175°C).

  2. Fry chicken in batches 3-4 mins per side until golden and crispy. Drain on paper towels.

3. Make the Avocado Lime Drizzle

  • Blend avocado, sour cream, lime juice, garlic, cilantro, salt, and water until smooth.

4. Assemble the Tostada Towers

  1. Layer: Tostada → Avocado drizzle → Crispy chicken → Jalapeños → Cilantro → Repeat!

  2. Top with extra lime wedges and Cotija cheese if desired.
