Donuts with Custard Filling Recipe

Ingredients

For the Donuts:

  • 2 1/4 tsp active dry yeast (1 packet)
  • 1/2 cup warm milk (110°F/45°C)
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter, melted
  • 1/2 tsp salt
  • 2 large eggs
  • 2 cups all-purpose flour (plus more for dusting)
  • Vegetable oil (for frying)

For the Custard Filling:

  • 1 cup whole milk
  • 2 tbsp granulated sugar
  • 2 egg yolks
  • 2 tbsp cornstarch
  • 1/2 tsp vanilla extract
  • 1 tbsp unsalted butter

For the Glaze:

  • 1 cup powdered sugar
  • 2-3 tbsp milk (to desired consistency)
  • Optional: 1/2 tsp vanilla extract

Instructions

  1. Make the Donut Dough:
    • In a small bowl, dissolve the yeast in warm milk and let it sit for about 5 minutes until frothy.
    • In a large mixing bowl, combine the melted butter, sugar, salt, and eggs. Add the yeast mixture and mix well.
    • Gradually add the flour, mixing until a dough forms. Knead the dough on a floured surface for about 5-7 minutes until smooth.
    • Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1-1.5 hours, or until doubled in size.
  2. Prepare the Custard Filling:
    • In a saucepan, heat the milk and sugar over medium heat until warm.
    • In a separate bowl, whisk together the egg yolks and cornstarch until smooth.
    • Slowly pour the warm milk mixture into the egg mixture while whisking continuously. Return the mixture to the saucepan and cook over medium heat, stirring constantly until thickened.
    • Remove from heat, stir in the vanilla extract and butter. Let cool, then refrigerate until ready to use.
  3. Shape the Donuts:
    • Once the dough has risen, punch it down and roll it out on a floured surface to about 1/2-inch thick. Cut out donuts using a donut cutter or two round cutters.
    • Place the cut donuts on a parchment-lined baking sheet, cover, and let them rise for about 30 minutes.
  4. Fry the Donuts:
    • In a deep pot or fryer, heat vegetable oil to 350°F (175°C). Fry the donuts in batches until golden brown, about 2-3 minutes per side. Drain on paper towels.
  5. Fill the Donuts:
    • Once cooled, use a piping bag to fill each donut with the chilled custard filling. Insert the piping tip into the side of the donut and squeeze gently.
  6. Glaze the Donuts:
    • In a bowl, mix the powdered sugar with milk until smooth. Dip the top of each filled donut into the glaze and let it set.
