Ingredients (Makes 1 loaf)
- 2 cups (250g) all-purpose flour (spooned & leveled)
- 1 cup (200g) granulated sugar
- 1 cup (2 sticks / 225g) unsalted butter, softened
- 4 large eggs, room temperature
- ½ cup (120ml) milk, room temperature
- 2 tsp vanilla extract (or 1 tsp vanilla + 1 tsp almond extract for depth)
- 2 tsp baking powder
- ½ tsp salt (omit if using salted butter)
Optional Glaze:
- 1 cup powdered sugar + 2 tbsp milk + ½ tsp vanilla
Instructions
1. Prep & Cream:
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan and line with parchment.
- In a bowl, whisk flour, baking powder, and salt. Set aside.
- Using a mixer, beat butter + sugar until light and fluffy (~3 mins).
- Add eggs one at a time, then mix in vanilla.
2. Combine & Bake:
- Alternate adding flour mixture and milk (3 additions of flour, 2 of milk), mixing until just combined.
- Pour batter into the pan. Smooth the top.
- Bake 50–60 minutes until a toothpick comes out clean.
3. Cool & Glaze:
- Let cool 10 mins in the pan, then transfer to a wire rack.
- Drizzle with glaze (if using) once fully cooled.
