Ingredients:

  • 4 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 packet (1 oz) fajita seasoning mix
  • 1 tablespoon olive oil
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 1 cup cooked rice (white, brown, or cauliflower rice)
  • 1 cup shredded cheddar cheese (or a Mexican blend)
  • 1 cup salsa (store-bought or homemade)
  • ½ cup sour cream (optional, for serving)
  • Fresh cilantro, chopped (for garnish)
  • Lime wedges (for serving)

Instructions:

  1. Preheat the oven:
    • Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Season the chicken:
    • In a large bowl, toss the chicken pieces with the fajita seasoning mix until evenly coated.
  3. Cook the chicken and veggies:
    • Heat the olive oil in a large skillet over medium-high heat. Add the seasoned chicken and cook for 4-5 minutes, until lightly browned but not fully cooked through.
