Flourless Cottage Cheese Pancakes 🥞✨

Light, high-protein, and naturally fluffy—these pancakes are secretly healthy but taste like a treat! Perfect for breakfast or a post-workout snack.


Ingredients (Makes 6-8 pancakes)

  • 1 cup (225g) cottage cheese (small-curd, full-fat for creaminess)

  • 2 large eggs

  • 1/2 cup rolled oats (or oat flour)

  • 1 tsp vanilla extract

  • 1/2 tsp baking powder

  • 1 tbsp honey or maple syrup (optional, for sweetness)

  • Pinch of salt

  • Butter or oil for cooking

Optional Add-ins:

  • Cinnamon, lemon zest, or blueberries

  • Protein powder (1 scoop, adjust liquid if needed)


Instructions

1. Blend the Batter

  • In a blender, combine cottage cheese, eggs, oats, vanilla, baking powder, honey, and salt.

  • Blend until smooth (30 sec). Let sit 5 mins to thicken.

2. Cook the Pancakes

  • Heat a non-stick pan over medium-low heat. Add butter/oil.

  • Pour 1/4 cup batter per pancake. Cook for 2-3 mins until bubbles form.

  • Flip and cook 1-2 mins more until golden.

3. Serve & Enjoy!

  • Top with fresh fruit, yogurt, nut butter, or extra honey.
