Instructions:
1. Prep & Preheat:

Preheat oven to 425°F (220°C). Line a baking sheet with parchment.
2. Mix Dry Ingredients:

Whisk together flour, baking powder, sugar, salt, and xanthan gum in a bowl.
3. Cut in Butter:

Use a pastry cutter or fingers to blend cold butter into the flour until pea-sized crumbs form.
4. Add Wet Ingredients:

Stir in buttermilk (and egg, if using) until just combined (dough will be sticky).
5. Shape & Bake:
