Fluffy Gluten-Free Biscuits 🧈✨

Light, buttery, and perfectly flaky—no one will guess they’re gluten-free! Ideal with gravy, jam, or just plain.

Makes: 8-10 biscuits

Prep Time: 10 mins
Bake Time: 12-15 mins


Ingredients:

  • 2 cups (240g) gluten-free 1:1 flour blend (like Bob’s Red Mill or King Arthur)

  • 1 tbsp baking powder

  • 1 tsp sugar (optional)

  • ½ tsp salt

  • ½ tsp xanthan gum (omit if your blend already includes it)

  • 6 tbsp (85g) cold butter (or dairy-free alternative), cubed

  • ¾ cup (180ml) cold buttermilk (*or dairy-free milk + 1 tsp vinegar*)

  • 1 large egg (optional, for extra richness)


Instructions:

1. Prep & Preheat:

  • Preheat oven to 425°F (220°C). Line a baking sheet with parchment.

2. Mix Dry Ingredients:

  • Whisk together flour, baking powder, sugar, salt, and xanthan gum in a bowl.

3. Cut in Butter:

  • Use a pastry cutter or fingers to blend cold butter into the flour until pea-sized crumbs form.

4. Add Wet Ingredients:

  • Stir in buttermilk (and egg, if using) until just combined (dough will be sticky).

5. Shape & Bake:

  • Turn dough onto a floured surface, pat into a 1-inch thick rectangle.

  • Cut with a 2.5-inch biscuit cutter (or glass). Avoid twisting—press straight down.

  • Place on baking sheet, brush tops with melted butter (optional).

  • Bake for 12-15 mins until golden.


Pro Tips:

  • Keep ingredients COLD for flaky layers.

  • Don’t overmix—tough biscuits are the enemy!

  • No buttermilk? Mix ¾ cup milk + 1 tsp lemon juice/vinegar. Let sit 5 mins.
