Ingredients:

For the Cheesecake Filling:

  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup heavy cream

For the Sandwiches:

  • 4 slices of thick white bread (or brioche for a richer flavor)
  • 1 cup fresh strawberries, diced
  • 1/4 cup granulated sugar
  • 1 tsp lemon juice (optional, for added freshness)
  • 2 eggs
  • 1/4 cup milk
  • 1/4 cup flour
  • 1 tsp vanilla extract
  • 1 cup crushed graham crackers (for coating)
  • 1/2 cup vegetable oil (for frying)

Instructions:

1. Prepare the Cheesecake Filling:

  1. In a medium bowl, use an electric mixer to beat the softened cream cheese, powdered sugar, and vanilla extract until smooth.
  2. Add the heavy cream and continue mixing until the mixture becomes fluffy and thickened. Set aside.

2. Prepare the Strawberry Filling:

  1. In a small bowl, combine the diced strawberries, granulated sugar, and lemon juice (if using). Toss to coat the strawberries and let them sit for about 10-15 minutes to macerate and release their juices. Set aside.

3. Assemble the Sandwiches:

  1. Spread a generous layer of the cheesecake filling onto one slice of bread.
  2. Spoon a few tablespoons of the macerated strawberries on top of the cheesecake filling.
  3. Place another slice of bread on top to form a sandwich. Press lightly to seal the edges.

4. Prepare the Coating:

  1. In one shallow dish, whisk together the eggs, milk, and vanilla extract.
  2. In another shallow dish, place the flour.
  3. In a third shallow dish, spread the crushed graham crackers.

5. Coat the Sandwiches:

  1. Carefully dip each assembled sandwich into the flour, making sure both sides are lightly coated.
  2. Next, dip the sandwich into the egg mixture, coating both sides evenly.
  3. Then, coat the sandwich in the crushed graham crackers, pressing gently to make sure it sticks well.

6. Fry the Sandwiches:

  1. In a large skillet or frying pan, heat the vegetable oil over medium heat.
  2. Once the oil is hot, carefully place the prepared sandwiches in the pan, cooking 2 at a time (or as many as fit comfortably in your pan).
  3. Fry each sandwich for about 2-3 minutes per side or until golden brown and crispy.
  4. Remove the sandwiches from the oil and place them on a plate lined with paper towels to drain any excess oil.

7. Serve:

  1. Allow the fried strawberry cheesecake sandwiches to cool slightly.
  2. Slice them diagonally or into halves, then serve with extra strawberries, whipped cream, or a dusting of powdered sugar for garnish.
