Ingredients
For the Chicken & Potatoes:
- 8 chicken drumsticks (skin-on for crispiness)
- 1.5 lbs (700g) baby potatoes, halved (or Yukon golds, quartered)
- 3 tbsp olive oil
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme (or rosemary)
For the Garlic Parmesan Coating:
- ½ cup (50g) grated Parmesan cheese
- 4 garlic cloves, minced
- 2 tbsp butter, melted
- 2 tbsp fresh parsley, chopped
Instructions
- Prep oven & pan: Preheat to 425°F (220°C). Line a baking sheet with parchment.
- Season potatoes: Toss potatoes with 2 tbsp olive oil, salt, pepper, paprika, and thyme. Spread on the pan.
- Roast potatoes: Bake for 15 mins while you prep the chicken.
- Coat chicken: Mix Parmesan, garlic, melted butter, and 1 tbsp olive oil. Rub over drumsticks.
- Combine & roast: Add chicken to the pan with potatoes. Bake 30-35 mins until chicken hits 165°F (74°C) and potatoes are tender.
- Garnish: Sprinkle with fresh parsley and extra Parmesan.
