Grilled Shrimp Caesar Wraps 🍤🥬

Juicy grilled shrimp, crisp romaine, and creamy Caesar dressing wrapped in a warm tortilla—a light yet satisfying meal ready in 15 minutes!

Ingredients (Serves 2)

For the Shrimp:

  • ½ lb (225g) large shrimp, peeled & deveined

  • 1 tbsp olive oil

  • 1 tsp garlic powder

  • ½ tsp smoked paprika

  • ½ tsp lemon zest

  • Salt & pepper to taste

For the Wraps:

  • 2 large flour tortillas (or spinach wraps)

  • 2 cups romaine lettuce, chopped

  • ¼ cup grated Parmesan cheese

  • ¼ cup Caesar dressing (homemade or store-bought)

  • 1 tbsp lemon juice

  • Optional add-ins:

    • Cherry tomatoes, halved

    • Croutons (for crunch)

    • Avocado slices

Instructions

1️⃣ Grill the Shrimp

  1. Toss shrimp with olive oil, garlic powder, paprika, lemon zest, salt, and pepper.

  2. Grill on a skillet or BBQ over medium-high heat for 2–3 mins per side until pink and slightly charred.

2️⃣ Assemble the Wraps

  1. Warm tortillas briefly in a dry skillet (or microwave for 10 secs).

  2. Spread Caesar dressing down the center of each tortilla.

  3. Layer with lettuce, grilled shrimp, Parmesan, lemon juice, and any extras (tomatoes, croutons).

3️⃣ Roll & Serve

  1. Fold the sides of the tortilla inward, then roll tightly.

  2. Slice in half diagonally and serve immediately.

Pro Tips

🔥 Extra flavor: Add a dash of anchovy paste to the dressing.
🌯 Meal prep: Keep shrimp and dressing separate until ready to eat to avoid sogginess.
🍋 Lighter option: Use Greek yogurt-based Caesar dressing.

Perfect for lunch, picnics, or a quick dinner! 🏖️✨

Pair with: Sweet potato fries or a chilled white wine.
