Ingredients:

  • 1 box (5.1 oz) instant vanilla pudding mix
  • 2 cups milk
  • 1 tub (8 oz) whipped topping (Cool Whip)
  • 1 can (21 oz) fruit pie filling (cherry, blueberry, or strawberry, depending on your preference)
  • 1 cup crushed graham crackers or shortbread cookies
  • 1/2 cup butter, melted
  • 1/2 cup powdered sugar (optional, for added sweetness)

Instructions:

1. Prepare the Pudding:

  • In a large bowl, whisk together the instant vanilla pudding mix and milk according to the package instructions. Set aside to thicken for about 5 minutes.

2. Prepare the Crust:

  • In a small bowl, combine the crushed graham crackers or cookies with the melted butter. Stir well until the mixture resembles coarse crumbs.
  • Press the mixture into the bottom of a 9×9-inch or similar sized serving dish to form a crust.

3. Combine the Pudding and Whipped Cream:

  • Once the pudding has thickened, fold in the whipped topping (Cool Whip) gently until fully combined. This creates a creamy, fluffy texture.

4. Layer the Dessert:

  • Pour the pudding mixture over the graham cracker crust, spreading it evenly.
  • Top the pudding layer with a can of fruit pie filling, spreading it out evenly to cover the top. You can use cherry, blueberry, or strawberry, depending on your preference.

5. Chill:

  • Cover the dish with plastic wrap or a lid and refrigerate for at least 2 hours (or longer) to let the dessert set and chill.

6. Serve and Enjoy:

  • Once chilled, scoop the dessert into bowls and serve. Garnish with additional crushed cookies or fruit if desired.
