Here’s a simple and authentic recipe for homemade Mexican migas, a hearty breakfast dish with crispy tortillas, eggs, and fresh ingredients:

Ingredients

  • 6 corn tortillas, cut into strips or small triangles
  • 4 large eggs, beaten
  • 2 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 1 jalapeño or serrano pepper, diced (optional for spice)
  • 2 medium tomatoes, diced
  • 1 cup shredded cheese (cheddar, Monterey Jack, or queso fresco)
  • Salt and black pepper to taste
  • Fresh cilantro, chopped (for garnish)

Optional Toppings:

  • Avocado slices
  • Salsa or pico de gallo
  • Sour cream or crema
  • Refried beans or black beans

Instructions

1. Crisp the Tortillas:

  1. Heat oil in a large skillet over medium-high heat.
  2. Add the tortilla strips and fry until golden and crispy, stirring occasionally (about 4-5 minutes).
  3. Remove the tortillas and place them on a paper towel-lined plate to drain. Set aside.

2. Cook the Vegetables:

  1. In the same skillet (add more oil if necessary), sauté the chopped onion and jalapeño until softened, about 2-3 minutes.
  2. Add the diced tomatoes and cook until softened and slightly reduced, about 2-3 minutes.

3. Combine Eggs and Tortillas:

  1. Reduce the heat to medium-low and push the vegetables to one side of the skillet.
  2. Pour the beaten eggs into the skillet and let them set slightly.
  3. Gently scramble the eggs, mixing them with the vegetables.
  4. Add the crispy tortilla strips back into the skillet and toss gently to combine.

4. Add Cheese:

  • Sprinkle shredded cheese over the top and let it melt. Stir gently to incorporate.

5. Garnish and Serve:

  • Remove the skillet from the heat and garnish with fresh cilantro.
  • Serve immediately with your choice of toppings like avocado slices, salsa, or beans.

Tips:

  • Use stale tortillas: Slightly stale tortillas hold up better and crisp more evenly.
  • Add protein: Cooked chorizo, shredded chicken, or crumbled bacon can be added for a heartier meal.
  • Customize the heat: Adjust the spice level by including or omitting jalapeños/serranos.
