Honey Butter Discard Sourdough Rolls

Ingredients:

For the Rolls:

  • 1 cup sourdough discard (unfed)
  • 3/4 cup warm water (110°F/43°C)
  • 1 tablespoon active dry yeast
  • 2 tablespoons granulated sugar
  • 1/2 cup milk (warm)
  • 1/4 cup unsalted butter, melted
  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 large egg (for egg wash)

For the Honey Butter:

  • 1/4 cup unsalted butter, softened
  • 2 tablespoons honey
  • 1/2 teaspoon ground cinnamon (optional)
  • Pinch of salt

Instructions:

1. Activate the Yeast:
  • In a small bowl, combine the warm water, sugar, and yeast. Stir and let it sit for about 5-10 minutes, or until the mixture is frothy.
2. Prepare the Dough:
  • In a large mixing bowl, combine the sourdough discard, warm milk, melted butter, and the yeast mixture.
  • Add the flour and salt, then stir until a dough forms. Knead the dough on a floured surface for about 8-10 minutes, or until smooth and elastic.
  • Place the dough in a greased bowl, cover it with a damp cloth, and let it rise for 1-2 hours, or until doubled in size.
3. Shape the Rolls:
  • Once the dough has risen, punch it down and divide it into 12 equal pieces.
  • Roll each piece into a ball and place them in a greased 9×13-inch baking dish. Leave a little space between each roll.
  • Cover the rolls with a damp towel and let them rise for another 30-60 minutes, or until they puff up and nearly touch each other.
4. Bake the Rolls:
  • Preheat your oven to 375°F (190°C).
  • Brush the tops of the rolls with the egg wash (a beaten egg mixed with a little water).
  • Bake for 20-25 minutes, or until the rolls are golden brown on top.
5. Make the Honey Butter:
  • While the rolls are baking, combine the softened butter, honey, cinnamon (if using), and a pinch of salt in a small bowl. Mix until smooth and well combined.
6. Serve:
  • Once the rolls are out of the oven, brush them generously with the honey butter while they’re still warm.
  • Let them cool slightly, and serve!

Tips:

  • Storage: These rolls can be stored at room temperature for 1-2 days or refrigerated for up to a week. Warm them up before serving for the best flavor.
  • Freezing: To freeze the rolls, let them cool completely and place them in an airtight container or freezer bag. Reheat in the oven when you’re ready to serve.
