Instant Pot Pot Roast Recipe

Ingredients:

  • 3 to 4 pounds beef chuck roast
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth (or enough to cover the roast)
  • 3-4 carrots, peeled and cut into chunks
  • 3-4 potatoes, peeled and cut into chunks (Yukon Gold or red potatoes work well)
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Optional: 2 tablespoons cornstarch + 2 tablespoons water (for thickening gravy)

Instructions:

  1. Sear the Meat:
    • Set your Instant Pot to the “Sauté” function. Add the olive oil. Season the chuck roast with salt and pepper, then sear it in the pot for about 4-5 minutes on each side until browned. Remove the roast and set it aside.
  2. Sauté the Aromatics:
    • Add the chopped onion to the pot and sauté for about 3 minutes until softened. Add the minced garlic and sauté for another minute.
  3. Deglaze the Pot:
    • Pour in a cup of beef broth and use a wooden spoon to scrape up any browned bits from the bottom of the pot.
  4. Add Remaining Ingredients:
    • Return the roast to the pot. Add the remaining beef broth, carrots, potatoes, Worcestershire sauce, thyme, and rosemary.
  5. Pressure Cook:
    • Close the lid, ensuring the vent is sealed. Set the Instant Pot to “Manual” or “Pressure Cook” for 60 minutes on high pressure. It will take some time to come to pressure.
  6. Natural Release:
    • After the cooking time is up, allow the pressure to release naturally for about 15-20 minutes. Then, carefully turn the vent to release any remaining pressure.
  7. Optional Gravy:
    • If you’d like to thicken the juices into gravy, remove the roast and vegetables. Set the Instant Pot to “Sauté” again. Mix cornstarch and water to create a slurry, then stir it into the pot until thickened.
  8. Serve:
    • Slice the roast and serve with the carrots and potatoes. Drizzle with the gravy if desired.
