Irish Potato Leek Soup (Potato & Leek Soup)

Creamy, comforting, and full of flavor, this classic Irish soup is simple yet deeply satisfying. Perfect for chilly days!

Serves: 4-6

Ingredients:

  • 3 large leeks, white & light green parts only, sliced (about 4 cups)

  • 4 medium potatoes (Yukon Gold or Russet), peeled & diced

  • 3 tbsp butter (or olive oil for dairy-free)

  • 4 cups vegetable or chicken broth

  • 1 cup whole milk or heavy cream (for extra richness)

  • 2 cloves garlic, minced

  • 1 tsp salt, plus more to taste

  • ½ tsp black pepper

  • 1 bay leaf (optional)

  • 2 tbsp fresh chives or parsley, chopped (for garnish)


Instructions:

1. Prep the Leeks:

  • Slice leeks thinly and rinse well in a colander (they often hide dirt between layers!).

2. Sauté the Veggies:

  • In a large pot, melt butter over medium heat.

  • Add leeks and cook for 5 mins until softened.

  • Stir in garlic and cook for 1 min until fragrant.

3. Simmer the Soup:

  • Add potatoes, broth, salt, pepper, and bay leaf.

  • Bring to a boil, then reduce heat and simmer for 20 mins until potatoes are tender.

4. Blend & Finish:

  • Remove the bay leaf, then blend until smooth (immersion blender works best).

  • Stir in milk or cream and heat gently (don’t boil after adding dairy).

  • Adjust seasoning with more salt & pepper if needed.

5. Serve:

  • Ladle into bowls and top with fresh chives or parsley.

  • Optional: Add a swirl of cream or a pat of butter for extra richness.


Tips & Variations:

  • For extra flavor: Add a sprinkle of bacon bits or cheddar cheese on top.

  • Dairy-free? Use coconut milk instead of cream.

  • Chunky version? Reserve some potatoes before blending and stir back in.
