Ingredients:

3 large leeks, white & light green parts only, sliced (about 4 cups)

4 medium potatoes (Yukon Gold or Russet), peeled & diced

3 tbsp butter (or olive oil for dairy-free)

4 cups vegetable or chicken broth

1 cup whole milk or heavy cream (for extra richness)

2 cloves garlic, minced

1 tsp salt, plus more to taste

½ tsp black pepper

1 bay leaf (optional)

2 tbsp fresh chives or parsley, chopped (for garnish)
Instructions:
1. Prep the Leeks:

Slice leeks thinly and rinse well in a colander (they often hide dirt between layers!).
2. Sauté the Veggies:

In a large pot, melt butter over medium heat.

Add leeks and cook for 5 mins until softened.

Stir in garlic and cook for 1 min until fragrant.
3. Simmer the Soup:

Add potatoes, broth, salt, pepper, and bay leaf.

Bring to a boil, then reduce heat and simmer for 20 mins until potatoes are tender.
4. Blend & Finish:

Remove the bay leaf, then blend until smooth (immersion blender works best).

Stir in milk or cream and heat gently (don’t boil after adding dairy).

Adjust seasoning with more salt & pepper if needed.
5. Serve:
