Italian Drunken Noodles Recipe

Ingredients:
- 8 ounces fettuccine or wide egg noodles
- 2 tablespoons olive oil
- 1 pound Italian sausage (mild or hot), casings removed
- 1 large onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 4 cloves garlic, minced
- 1/2 cup dry white wine
- 1 (14.5-ounce) can diced tomatoes, undrained
- 1/2 teaspoon crushed red pepper flakes (optional)
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1/4 cup chopped fresh basil
- Grated Parmesan cheese, for serving
Instructions:
- Cook the Noodles:
- Bring a large pot of salted water to a boil. Add the fettuccine or egg noodles and cook according to package instructions until al dente. Drain and set aside.
- Cook the Sausage:
- In a large skillet, heat the olive oil over medium-high heat.
- Add the Italian sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
- Sauté the Vegetables:
- In the same skillet, add the sliced onion and bell peppers. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
- Add the minced garlic and cook for an additional 1 minute, until fragrant.
- Deglaze the Skillet:
- Pour in the white wine to deglaze the skillet, scraping up any browned bits from the bottom.
- Add the diced tomatoes with their juices, crushed red pepper flakes (if using), Italian seasoning, salt, and pepper. Stir to combine.
- Combine and Simmer:
- Return the cooked sausage to the skillet and stir to combine.
- Reduce the heat to low and simmer for about 5 minutes, allowing the flavors to meld together.
- Toss with Noodles:
- Add the cooked noodles to the skillet and toss to coat them evenly with the sauce.
- Stir in the chopped fresh basil.
- Serve:
- Serve the Italian Drunken Noodles hot, topped with grated Parmesan cheese.
