Italian Drunken Noodles Recipe

Ingredients:

  • 8 ounces fettuccine or wide egg noodles
  • 2 tablespoons olive oil
  • 1 pound Italian sausage (mild or hot), casings removed
  • 1 large onion, thinly sliced
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 4 cloves garlic, minced
  • 1/2 cup dry white wine
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1/4 cup chopped fresh basil
  • Grated Parmesan cheese, for serving

Instructions:

  1. Cook the Noodles:
    • Bring a large pot of salted water to a boil. Add the fettuccine or egg noodles and cook according to package instructions until al dente. Drain and set aside.
  2. Cook the Sausage:
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the Italian sausage and cook, breaking it up with a wooden spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  3. Sauté the Vegetables:
    • In the same skillet, add the sliced onion and bell peppers. Cook, stirring occasionally, until the vegetables are tender, about 5 minutes.
    • Add the minced garlic and cook for an additional 1 minute, until fragrant.
  4. Deglaze the Skillet:
    • Pour in the white wine to deglaze the skillet, scraping up any browned bits from the bottom.
    • Add the diced tomatoes with their juices, crushed red pepper flakes (if using), Italian seasoning, salt, and pepper. Stir to combine.
  5. Combine and Simmer:
    • Return the cooked sausage to the skillet and stir to combine.
    • Reduce the heat to low and simmer for about 5 minutes, allowing the flavors to meld together.
  6. Toss with Noodles:
    • Add the cooked noodles to the skillet and toss to coat them evenly with the sauce.
    • Stir in the chopped fresh basil.
  7. Serve:
    • Serve the Italian Drunken Noodles hot, topped with grated Parmesan cheese.
