Korean Cheese Corn Quesadillas Recipe

Ingredients:

  • 2 large flour tortillas
  • 1 cup corn kernels (fresh or frozen)
  • 1 tablespoon butter
  • 2 tablespoons mayonnaise
  • 1 tablespoon sugar
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon gochujang (Korean chili paste) (optional, for a spicy kick)
  • 1 cup shredded mozzarella cheese (or a blend of mozzarella and cheddar)
  • 2-3 tablespoons finely chopped green onions (optional)
  • 1 tablespoon sesame seeds (optional)
  • Salt and pepper, to taste
  • Butter or oil for cooking the quesadilla

Instructions:

1. Prepare the Korean Cheese Corn Filling:
  • Cook the Corn: If using frozen corn, cook it according to the package instructions. If using fresh corn, cut the kernels off the cob and sauté in a pan with a little butter until tender (about 5 minutes).
  • Make the Corn Mixture: In a mixing bowl, combine the cooked corn, mayonnaise, sugar, soy sauce, sesame oil, and gochujang (if using). Stir well until the ingredients are fully combined and the corn is coated in the creamy sauce. Season with salt and pepper to taste.
2. Assemble the Quesadilla:

3. Cook the Quesadilla:
  • Heat the Pan: Heat a non-stick skillet or frying pan over medium heat. Add a little butter or oil to coat the bottom of the pan.
