Here’s a simple and delicious recipe for Lemon Bliss Tart! It’s a no-bake dessert with a perfect balance of tart lemon flavor and creamy sweetness, topped off with a little chocolate or extra lemon zest.

Lemon Bliss Tart

Ingredients:

  • 1 packet digestive biscuits (about 250g), crushed
  • 1/4 cup unsalted butter, melted
  • 1 tin (397g) condensed milk
  • 1/2 cup fresh lemon juice
  • 1/4 cup lemon zest (about 2 lemons)
  • 1 cup whipped cream (whipped until stiff peaks form)
  • 2 chocolates of your choice, crushed (optional for topping)
  • Additional lemon zest for garnish (optional)

Instructions:

1. Prepare the crust:

  • In a food processor or a zip-top bag with a rolling pin, crush the digestive biscuits until fine crumbs form.
  • In a bowl, mix the crushed biscuits with the melted butter until fully combined.
  • Press the biscuit mixture into the base of a tart pan or a pie dish to form an even crust. Use the back of a spoon to pack it down firmly.
  • Place the crust in the fridge to chill for about 20-30 minutes, allowing it to set while you prepare the filling.

2. Make the lemon filling:

  • In a medium bowl, combine the condensed milk, lemon juice, and lemon zest. Stir until smooth and well mixed.
  • Gently fold in the whipped cream until fully incorporated, being careful not to deflate the whipped cream.

3. Assemble the tart:

  • Once the crust has set, pour the lemon filling into the chilled crust, spreading it out evenly with a spatula.
  • Smooth the top of the tart, and if you like, top it with crushed chocolate of your choice (like dark chocolate, milk chocolate, or white chocolate) or a bit more fresh lemon zest for added flavor and decoration.

4. Chill and serve:

  • Refrigerate the tart for at least 2 hours, or overnight if possible, to allow it to fully set.
  • Once ready, slice and serve chilled, and enjoy the creamy, zesty, and delicious lemon bliss!

This Lemon Bliss Tart is the perfect balance of sweet, tart, and creamy, with a crunchy biscuit base. The addition of chocolate is a fun twist, but you can skip it for a more traditional lemon tart experience. Enjoy! 🍋🍫🍰
