Ingredients:

  • For the Chicken:
    • 4 boneless, skinless chicken breasts (or thighs)
    • Salt and pepper to taste
    • 1 tablespoon olive oil
    • 1 tablespoon butter
  • For the Lemon Garlic Butter Sauce:
    • 4 cloves garlic, minced
    • 1/4 cup unsalted butter
    • Juice of 1 lemon
    • Zest of 1 lemon (optional)
    • 1 teaspoon dried thyme (or fresh)
    • 1 teaspoon dried parsley (or fresh)
    • Salt and pepper to taste
    • Red pepper flakes (optional, for a little heat)
  • For the Green Beans:
    • 1 lb fresh green beans, trimmed
    • 1 tablespoon olive oil
    • Salt and pepper to taste

Instructions:

  1. Prepare the Chicken:
    • Season the chicken breasts with salt and pepper on both sides.
    • Heat olive oil and butter in a large skillet over medium-high heat. Add the chicken breasts and cook for about 6-7 minutes per side, until golden brown and cooked through. Remove the chicken from the skillet and set aside.
  2. Cook the Green Beans:
    • In the same skillet, add 1 tablespoon of olive oil and the trimmed green beans. Sauté the green beans for about 4-5 minutes until slightly tender but still crisp. Season with salt and pepper to taste. Remove the beans from the skillet and set them aside with the chicken.
  3. Make the Lemon Garlic Butter Sauce:
    • In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
    • Stir in the lemon juice, lemon zest (if using), thyme, parsley, and season with salt and pepper. Let it cook for 1-2 minutes to combine the flavors.
  4. Combine Everything:
    • Return the chicken breasts and green beans to the skillet. Spoon the sauce over the chicken and green beans. Let everything cook together for 3-5 more minutes to warm through and let the flavors meld.
  5. Serve:
    • Garnish with additional fresh parsley or thyme if desired, and serve warm. You can also add a little more lemon juice for extra brightness!

This dish pairs wonderfully with mashed potatoes, rice, or a side salad. Enjoy!
