Ingredients:

  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 1/2 cups dried green or brown lentils, rinsed and drained
  • 1 can (14.5 oz) diced tomatoes (with juices)
  • 6 cups vegetable broth (or water)
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric (optional, for extra warmth)
  • 1/2 teaspoon ground cinnamon (optional, for depth)
  • 1 teaspoon dried thyme or 1 sprig fresh thyme
  • Salt and pepper to taste
  • 2 cups spinach or kale, roughly chopped (optional)
  • Juice of 1 lemon (optional, for brightness)
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

1. Prepare the Vegetables:

  • Heat the olive oil in a large pot over medium heat.
  • Add the diced onion, carrots, and celery. Sauté for 5-7 minutes, until the vegetables are softened and the onion is translucent.
  • Add the garlic and cook for another 1-2 minutes until fragrant.

2. Add Lentils and Spices:

  • Stir in the cumin, turmeric (if using), cinnamon (if using), and thyme. Cook for 1 minute to toast the spices and bring out their flavors.
  • Add the lentils, diced tomatoes (with juices), and vegetable broth. Bring the mixture to a boil, then reduce the heat to low.

3. Simmer the Soup:

  • Cover the pot and let the soup simmer for 30-40 minutes, or until the lentils are tender. Check the soup occasionally, and add more broth or water if it becomes too thick.

4. Add Greens (Optional):

  • About 10 minutes before the soup is done, stir in the chopped spinach or kale (if using). Let the greens wilt into the soup.

5. Adjust the Seasoning:

  • Once the lentils are tender, taste the soup and adjust the seasoning with salt, pepper, and a squeeze of lemon juice to brighten the flavors.

6. Serve:

  • Ladle the soup into bowls and garnish with fresh parsley, if desired.
  • Serve hot with a slice of crusty bread or a side of rice.
