Macaroni and Tomatoes

Macaroni and Tomatoes is a comforting, simple dish that combines tender pasta with juicy tomatoes, often seasoned with a bit of butter, sugar, and salt for a sweet and savory flavor. It’s a dish that’s been a favorite for many, passed down through generations. Whether you enjoy it as a side dish or a main course, it’s a nostalgic, budget-friendly meal that’s quick to make and full of flavor.

Ingredients:

  • 1 cup elbow macaroni (or any small pasta)
  • 2 tablespoons butter
  • 1 can (14.5 oz) diced tomatoes, undrained (or fresh tomatoes, chopped)
  • 1/2 teaspoon sugar (optional, for sweetness)
  • Salt and black pepper, to taste
  • 1/2 teaspoon onion powder (optional)
  • 1/2 teaspoon garlic powder (optional)
  • 1 tablespoon chopped fresh basil (optional, for garnish)
  • 1/4 cup grated Parmesan cheese (optional, for topping)

Instructions:

1. Cook the Macaroni:

  • Bring a large pot of salted water to a boil.
  • Add the macaroni and cook according to the package instructions, about 7-8 minutes, or until the pasta is al dente.
  • Drain the pasta and set aside.

2. Prepare the Tomato Sauce:

  • While the pasta is cooking, heat butter in a large skillet or saucepan over medium heat.
  • Once the butter has melted, add the diced tomatoes (with juice) to the pan.
  • Stir in the sugar, salt, black pepper, and any optional seasonings like onion powder and garlic powder.
  • Let the tomatoes simmer for about 5-7 minutes, stirring occasionally, until the sauce thickens slightly and the flavors meld together.

3. Combine Pasta and Sauce:

  • Add the cooked macaroni to the skillet with the tomato sauce.
  • Stir well to combine, making sure the pasta is evenly coated with the tomato mixture.
  • Let it cook for another 2-3 minutes to allow the pasta to absorb some of the tomato sauce.

4. Serve:

  • Transfer the macaroni and tomatoes to serving bowls.
  • Top with freshly chopped basil and a sprinkle of Parmesan cheese if desired.

Tips for Success:

  • Fresh Tomatoes: If you prefer fresh tomatoes, use about 4-5 medium-sized tomatoes, chopped, and simmer them in the butter until they break down into a sauce. You can also add a little tomato paste for a thicker sauce.
  • Seasoning Variations: Feel free to get creative with the seasonings! You can add a pinch of red pepper flakes for heat, or a drizzle of balsamic vinegar for extra depth of flavor.
  • Creamy Version: For a creamier take on this dish, stir in a little cream cheese or heavy cream just before combining with the pasta. It will add a rich, velvety texture to the sauce.
  • Protein Addition: If you want to make it a heartier meal, you can add cooked ground beef, sausage, or shredded chicken to the dish.

Serving Suggestions:

  • As a Side: This dish pairs well with grilled meats like chicken, pork chops, or steak.
  • As a Main: Serve it with a side salad or garlic bread for a simple, satisfying meal.
  • For Leftovers: This dish stores well in the fridge for 2-3 days, and can also be frozen for up to a month.

Variations:

  • Southern-style Macaroni and Tomatoes: In some southern kitchens, a dash of vinegar is added for tang, or the dish might be finished with a sprinkle of cheese mixed into the sauce for a cheesy, creamy texture.
  • Spicy Macaroni and Tomatoes: Add some diced jalapeños or a pinch of cayenne pepper for a spicy twist.
  • Herbaceous Macaroni and Tomatoes: Fresh oregano, thyme, or parsley can be added to the sauce for extra fragrance and flavor.

Macaroni and Tomatoes is a simple, wholesome dish that’s quick to make and comforting. It’s versatile and can be customized to suit your tastes, making it a great meal for busy nights or when you’re craving something warm and satisfying!
