Meatloaf

Ingredients:

  • For the Meatloaf:
    • 1 lb ground beef (or a mix of beef and pork)
    • 1 cup breadcrumbs (or crushed crackers)
    • 1/2 cup milk
    • 1/2 cup onion, finely chopped
    • 1/4 cup ketchup (plus extra for topping)
    • 1 large egg
    • 1 teaspoon garlic powder
    • 1 teaspoon Worcestershire sauce
    • 1 teaspoon salt
    • 1/2 teaspoon pepper
    • Optional: herbs like thyme or parsley

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C).
  2. Mix Ingredients: In a large bowl, combine the ground beef, breadcrumbs, milk, chopped onion, ketchup, egg, garlic powder, Worcestershire sauce, salt, and pepper. Mix until just combined—avoid overmixing.
  3. Shape the Loaf: Transfer the mixture to a loaf pan, shaping it into a loaf. Spread a thin layer of ketchup on top if desired.
  4. Bake: Bake for 1 hour, or until the internal temperature reaches 160°F (70°C). Let it rest for about 10 minutes before slicing.

Mashed Potatoes

Ingredients:

  • 2 lbs potatoes (Russet or Yukon Gold work well)
  • 1/2 cup milk (adjust for desired creaminess)
  • 1/4 cup butter
  • Salt and pepper to taste
  • Optional: garlic powder or fresh herbs for added flavor

Instructions:

  1. Prepare Potatoes: Peel and chop the potatoes into even-sized chunks.
  2. Boil: Place the potatoes in a large pot of salted water. Bring to a boil and cook until tender, about 15-20 minutes.
  3. Drain: Drain the potatoes and return them to the pot.
  4. Mash: Add the butter and milk to the potatoes. Mash until smooth and creamy, adjusting the milk for your preferred consistency. Season with salt and pepper to taste.
  5. Serve: Plate the sliced meatloaf alongside a generous scoop of mashed potatoes. Drizzle with gravy or additional ketchup if desired.
