Mexican Avocado Tomatillo Spicy Salsa

Ingredients:

  • 3 medium tomatillos, husked and rinsed
  • 1 ripe avocado, peeled and pitted
  • 1-2 serrano chilies or jalapeños, stemmed (adjust to your spice preference)
  • 1/4 cup fresh cilantro leaves
  • 1 small onion, roughly chopped
  • 1-2 cloves garlic, peeled
  • 1 tablespoon lime juice (freshly squeezed)
  • 1 teaspoon salt, or to taste
  • 1/4 cup water (or more if needed to adjust the consistency)

Optional:

  • 1/2 teaspoon smoked paprika (for an added smoky flavor)
  • 1 small tomato, chopped (for extra texture)
  • A pinch of cumin (optional, for a warm undertone)
  • A handful of pickled jalapeños (if you want a tangy addition)

Instructions:

1. Roast the Tomatillos:

  • Preheat your grill or a cast-iron skillet over medium-high heat. Alternatively, you can roast the tomatillos under a broiler.
  • Place the husked tomatillos directly on the grill or skillet. Let them cook for 5-7 minutes, turning occasionally, until they become charred on the outside and soften. If using the broiler, place them on a baking sheet and broil for 5-6 minutes, turning halfway through.
  • Once roasted, allow the tomatillos to cool slightly.

2. Blend the Salsa:
