Here’s a fun and flavorful twist on a classic fair food—Mexican Corn Dogs! This recipe blends the crunchy, golden perfection of corn dogs with bold Mexican flavors.


Mexican Corn Dogs

Ingredients

For the Batter:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp chili powder
  • 1/4 tsp ground cumin
  • 1/4 tsp smoked paprika
  • 1/2 tsp salt
  • 1 cup buttermilk (or milk with 1 tbsp vinegar)
  • 1 egg, beaten

For the Corn Dogs:

  • 6 hot dogs or sausages (try spicy chorizo for an authentic kick!)
  • Wooden skewers or popsicle sticks
  • 1 cup shredded cheese (optional, for coating)
  • Oil for frying

For Toppings (optional):

  • Cotija cheese, crumbled
  • Tajín seasoning
  • Fresh cilantro, chopped
  • Mexican crema or sour cream
  • Lime wedges

Instructions

  1. Prepare the Hot Dogs
    • Pat the hot dogs dry and insert skewers into each one. If using cheese, roll the hot dogs in shredded cheese, pressing it to adhere. Freeze for 10 minutes to help the cheese stay in place during frying.
  2. Make the Batter
    • In a large bowl, whisk together the cornmeal, flour, sugar, baking powder, chili powder, cumin, smoked paprika, and salt.
    • Stir in the buttermilk and beaten egg until smooth. Pour the batter into a tall glass for easy dipping.
  3. Heat the Oil
    • Heat about 2–3 inches of oil in a deep skillet or saucepan to 350°F (175°C).
  4. Dip and Fry
    • Dip each hot dog into the batter, ensuring it’s fully coated. Let any excess batter drip off.
    • Carefully place the coated hot dogs into the hot oil. Fry 2–3 at a time until golden brown, about 3–4 minutes.
  5. Drain and Garnish
    • Remove the corn dogs from the oil and place them on paper towels to drain.
    • Sprinkle with Cotija cheese and Tajín for a spicy, tangy finish. Drizzle with Mexican crema and garnish with cilantro if desired.
  6. Serve
    • Serve hot with lime wedges and dipping sauces like salsa, guacamole, or spicy mayo.

Tips

  • Chorizo Option: Replace traditional hot dogs with fully cooked chorizo for an extra burst of flavor.
  • Make it Cheesy: Insert a stick of mozzarella cheese alongside the hot dog for a cheesy surprise!
  • Baking Alternative: If you prefer a healthier option, bake the coated hot dogs at 400°F (200°C) on a lined baking sheet for 15–20 minutes.
