Cheesy Sausage Balls with a Kick 🔥🧀

These spicy, cheesy sausage balls are the perfect party appetizer—easy to make, packed with flavor, and great for game day, brunch, or holiday gatherings! They’re crispy on the outside, tender inside, and loaded with pepper jack cheese, spicy sausage, and a hint of jalapeño.

Spicy Cheesy Sausage Balls

Prep Time: 10 mins | Cook Time: 20 mins | Total Time: 30 mins
Makes: ~30 sausage balls

Ingredients:

  • 1 lb (450g) spicy breakfast sausage (or regular sausage + ½ tsp cayenne)

  • 2 cups (200g) sharp cheddar cheese, shredded

  • 1 cup (100g) pepper jack cheese, shredded

  • 1 ½ cups (180g) baking mix (like Bisquick)

  • 1 small jalapeño, finely diced (seeds removed for less heat)

  • ½ tsp garlic powder

  • ½ tsp smoked paprika

  • ¼ tsp black pepper

  • 3 tbsp cold butter, grated

  • 2-3 tbsp milk (if needed for binding)

Instructions:

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

  2. Mix dry ingredients: In a large bowl, combine baking mix, garlic powder, smoked paprika, and black pepper.

  3. Add cheese & sausage: Mix in shredded cheeses, grated butter, diced jalapeño, and raw sausage. Use your hands or a mixer to combine until fully incorporated. (If too dry, add 1 tbsp milk at a time.)

  4. Form balls: Roll into 1-inch balls (about 1 tbsp each) and place on the baking sheet.

  5. Bake 18-22 mins until golden brown and cooked through.

  6. Serve warm with ranch, spicy mayo, or chipotle dipping sauce.

🔥 Extra Kick Variations:

  • Habanero Heat: Add ½ tsp cayenne or 1 tbsp minced habanero.

  • Bacon Boost: Mix in ½ cup cooked, crumbled bacon.

  • Buffalo Style: Toss baked balls in 2 tbsp hot sauce + 1 tbsp melted butter.

  • Air Fryer Option: Cook at 370°F (188°C) for 10-12 mins, shaking halfway.

Storage: Keep in the fridge for 3-4 days or freeze for up to 3 months (reheat in oven at 350°F).

Perfect for tailgating, Christmas morning, or a spicy snack! Would you like a dip pairing suggestion? 😋
