Peach Pie Cruffins Recipe

Ingredients:

For the Dough:

  • 2 cups (250g) all-purpose flour

  • 1/4 cup (50g) granulated sugar

  • 1 tsp (5g) instant yeast

  • 1/2 tsp (3g) salt

  • 1/2 cup (120ml) warm milk

  • 1 large egg

  • 1/2 cup (113g) unsalted butter, cold (for lamination)

For the Peach Pie Filling:

  • 1 1/2 cups (about 200g) fresh or canned peaches, diced

  • 2 tbsp (25g) brown sugar

  • 1 tbsp (15ml) lemon juice

  • 1 tsp (2g) cinnamon

  • 1/2 tsp (1g) nutmeg (optional)

  • 1 tbsp (8g) cornstarch (to thicken)

For Assembly:

  • 2 tbsp (30g) melted butter (for brushing)

  • Extra sugar for sprinkling

For the Glaze (Optional):

  • 1/2 cup (60g) powdered sugar

  • 1-2 tbsp (15-30ml) milk or cream

  • 1/2 tsp (2.5ml) vanilla extract

Instructions:

1. Make the Dough:

  • In a bowl, mix flour, sugar, yeast, and salt.

  • Add warm milk and egg, mixing until a shaggy dough forms.

  • Knead for 5-7 minutes until smooth. Cover and let rise for 1 hour (or refrigerate overnight for better flavor).

2. Laminate the Dough (Create Layers):

  • Roll the dough into a rectangle (~10×12 inches).

  • Grate cold butter over 2/3 of the dough.

  • Fold the unbuttered third over the middle, then fold the remaining third over (like a letter).

  • Roll out again and repeat the folding process twice. Chill for 30 minutes between folds.

3. Make the Peach Filling:

  • In a saucepan, cook peaches, sugar, lemon juice, cinnamon, and nutmeg until soft (~5 mins).

  • Mix cornstarch with 1 tbsp water, add to peaches, and cook until thickened. Let cool.

4. Assemble Cruffins:

  • Roll the dough into a large rectangle (~1/4 inch thick).

  • Spread peach filling evenly over the dough.

  • Roll tightly into a log, then cut into 6-8 pieces.

  • Place each piece in a greased muffin tin, cover, and let rise for 30-45 mins.

5. Bake:

  • Preheat oven to 375°F (190°C).

  • Bake for 20-25 minutes until golden.

  • Brush with melted butter and sprinkle with sugar while warm.

6. Glaze (Optional):

  • Mix powdered sugar, milk, and vanilla until smooth. Drizzle over cooled cruffins.

Serving Suggestions:

  • Enjoy warm with vanilla ice cream or whipped cream.

  • Store in an airtight container for up to 2 days (best fresh).
