  • 2 cups of crushed pineapple (canned or fresh, with juice)
  • 1/2 cup of granulated sugar (or brown sugar for a richer flavor)
  • 3 large eggs
  • 1/2 cup (1 stick) of unsalted butter, melted
  • 4 cups of cubed bread (preferably stale or day-old bread)
  • 1 teaspoon of vanilla extract

  • A pinch of salt

  • 1/2 cup of shredded coconut
  • 1/4 cup of chopped pecans or walnuts

Instructions:

  1. Prepare the Bread:
    • Cube the bread into 1-inch pieces. If it’s fresh, let it sit out for a few hours to dry slightly. This helps absorb the liquid mixture better.
  2. Preheat Oven:
    • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or cooking spray.
  3. Mix Wet Ingredients:
    • In a large mixing bowl, whisk together the eggs, sugar, melted butter, vanilla extract, and a pinch of salt. Add cinnamon if desired.
  4. Combine with Pineapple:
    • Add the crushed pineapple (along with the juice) to the wet mixture and stir to combine.
  5. Assemble:
    • Gently fold the bread cubes into the pineapple mixture until evenly coated. Let it sit for 5–10 minutes to allow the bread to absorb the liquid.
  6. Bake:
