Ingredients:
- 1 box yellow cake mix
- 4 large eggs
- 1 cup pineapple juice (reserved from a can of crushed pineapple)
- 1/2 cup vegetable oil
- 1 can (20 oz) crushed pineapple, drained (juice reserved)
- 1 cup powdered sugar
- 1/4 cup pineapple juice
- 1 tablespoon butter, melted
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- Prepare the Cake Batter:
- In a large mixing bowl, combine the yellow cake mix, eggs, 1 cup of pineapple juice, and vegetable oil.
- Beat with an electric mixer on medium speed for about 2 minutes, or until the batter is smooth and well combined.
- Fold in the drained crushed pineapple.
- Bake the Cake:
- Pour the batter into the prepared baking pan and spread it evenly.
- Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
- Prepare the Pineapple Glaze:
- In a small bowl, whisk together the powdered sugar, 1/4 cup of pineapple juice, and melted butter until smooth.
- Glaze the Cake:
- While the cake is still warm, poke holes all over the top using a fork or a skewer.
- Pour the pineapple glaze evenly over the top of the cake, allowing it to soak into the holes.
- Cool and Serve:
- Allow the cake to cool completely in the pan on a wire rack.
- Once cooled, cut into squares and serve.
