Pineapple Juice Cake Recipe

Ingredients:

  • 1 box yellow cake mix
  • 4 large eggs
  • 1 cup pineapple juice (reserved from a can of crushed pineapple)
  • 1/2 cup vegetable oil
  • 1 can (20 oz) crushed pineapple, drained (juice reserved)
  • 1 cup powdered sugar
  • 1/4 cup pineapple juice
  • 1 tablespoon butter, melted

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. Prepare the Cake Batter:
    • In a large mixing bowl, combine the yellow cake mix, eggs, 1 cup of pineapple juice, and vegetable oil.
    • Beat with an electric mixer on medium speed for about 2 minutes, or until the batter is smooth and well combined.
    • Fold in the drained crushed pineapple.
  3. Bake the Cake:
    • Pour the batter into the prepared baking pan and spread it evenly.
    • Bake in the preheated oven for 45 minutes, or until a toothpick inserted into the center of the cake comes out clean.
  4. Prepare the Pineapple Glaze:
    • In a small bowl, whisk together the powdered sugar, 1/4 cup of pineapple juice, and melted butter until smooth.
  5. Glaze the Cake:
    • While the cake is still warm, poke holes all over the top using a fork or a skewer.
    • Pour the pineapple glaze evenly over the top of the cake, allowing it to soak into the holes.
  6. Cool and Serve:
    • Allow the cake to cool completely in the pan on a wire rack.
    • Once cooled, cut into squares and serve.
