Ingredients:
- 2 cups all-purpose flour
- 1 cup granulated sugar

- 2 large eggs
- 1/2 cup vegetable oil
- 1 teaspoon vanilla extract
- 1 can (20 oz) crushed pineapple, undrained
- 1/2 cup chopped walnuts (optional)
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.
- Mix Dry Ingredients:
- In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Stir well to blend.
- Mix Wet Ingredients:
- In another bowl, beat the eggs lightly. Add the vegetable oil, vanilla extract, and crushed pineapple (including the juice). Stir until well combined.
- Combine Ingredients:
- Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix. If using, fold in the chopped walnuts.
- Bake:
- Pour the batter into the prepared loaf pan. Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center of the loaf comes out clean.
- Cool:
- Allow the bread to cool in the pan for about 10 minutes. Then remove from the pan and let it cool completely on a wire rack before slicing and serving.
