  • 2 large eggs

  • 1 can (20 oz) crushed pineapple, undrained

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan or line it with parchment paper.
  2. Mix Dry Ingredients:
    • In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Stir well to blend.
  3. Mix Wet Ingredients:
    • In another bowl, beat the eggs lightly. Add the vegetable oil, vanilla extract, and crushed pineapple (including the juice). Stir until well combined.
  4. Combine Ingredients:
    • Pour the wet ingredients into the dry ingredients. Stir until just combined. Do not overmix. If using, fold in the chopped walnuts.
  5. Bake:
    • Pour the batter into the prepared loaf pan. Bake in the preheated oven for 60 minutes or until a toothpick inserted into the center of the loaf comes out clean.
  6. Cool:
    • Allow the bread to cool in the pan for about 10 minutes. Then remove from the pan and let it cool completely on a wire rack before slicing and serving.
