These Reese’s Butterfinger Cheesecake Bars are a decadent dessert that combines the richness of cheesecake with the delightful crunch of Reese’s and Butterfinger candies! Here’s the recipe:

Reese’s Butterfinger Cheesecake Bars 🍰🍫

Ingredients:

For the Crust:

  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 2 tablespoons granulated sugar

For the Cheesecake Filling:

  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1 cup sour cream
  • 1/2 cup Reese’s peanut butter cups, chopped
  • 1/2 cup Butterfinger candy bars, chopped

For the Topping:

  • 1/4 cup Reese’s peanut butter cups, chopped (for topping)
  • 1/4 cup Butterfinger candy bars, chopped (for topping)
  • 1/4 cup chocolate chips (optional)
  • 1/4 cup peanut butter (optional, for drizzle)

Instructions:

1. Make the Crust:

  • Preheat your oven to 325°F (163°C).
  • In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar. Stir until the mixture is evenly combined.
  • Press the graham cracker mixture into the bottom of a 9×13-inch baking dish or a square 8×8-inch pan lined with parchment paper or foil.
  • Bake the crust for about 10 minutes or until it’s set and golden. Remove from the oven and set aside to cool slightly.

2. Prepare the Cheesecake Filling:

  • In a large bowl, beat the softened cream cheese with a hand mixer or stand mixer until smooth and creamy.
  • Add the granulated sugar and vanilla extract, and mix until well combined.
  • Add the eggs one at a time, mixing well after each addition.
  • Fold in the sour cream until smooth.
  • Gently fold in the chopped Reese’s peanut butter cups and Butterfinger pieces, ensuring they are evenly distributed throughout the batter.

3. Assemble and Bake:

  • Pour the cheesecake filling over the baked crust, spreading it evenly with a spatula.
  • Bake in the preheated oven for 40-50 minutes, or until the edges are set and the center is slightly jiggly but firm when gently shaken.
  • Allow the cheesecake to cool to room temperature, then refrigerate for at least 4 hours or overnight to fully set.

4. Add the Toppings:

  • Once the cheesecake is chilled and set, sprinkle the top with the remaining chopped Reese’s peanut butter cups and Butterfinger pieces.
  • For an optional extra touch, melt the chocolate chips and drizzle over the top, or drizzle with melted peanut butter for a rich finishing touch.

5. Serve and Enjoy:

  • Cut the cheesecake into bars and serve chilled.
