Reuben Dip Recipe

Ingredients

  • 8 oz (225g) cream cheese, softened
  • 1 cup (150g) chopped corned beef (deli-style works great)
  • 1 cup (100g) shredded Swiss cheese
  • 1 cup (150g) sauerkraut, drained and squeezed dry
  • 1/2 cup (120g) sour cream
  • 1/2 cup (120g) Thousand Island dressing
  • Optional garnish: chopped parsley or extra shredded Swiss cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Mix the ingredients:
    • In a large mixing bowl, combine the softened cream cheese, chopped corned beef, shredded Swiss cheese, sauerkraut, sour cream, and Thousand Island dressing. Stir until everything is well combined.
  3. Transfer to a baking dish:
    • Spread the mixture evenly into a small oven-safe baking dish or cast-iron skillet.
  4. Bake:
    • Bake for 20-25 minutes, or until the dip is hot and bubbly, and the cheese is melted.
  5. Garnish and serve:
    • Remove from the oven and let it cool slightly. Garnish with chopped parsley or extra shredded Swiss cheese if desired.
    • Serve warm with rye bread slices, crackers, pretzels, or fresh veggies for dipping.

Tips

  • Make it ahead: Assemble the dip ahead of time and refrigerate until ready to bake. Add a few extra minutes to the baking time if cooking from cold.
  • Slow cooker option: Combine all ingredients in a slow cooker and cook on low for 2-3 hours, stirring occasionally.
  • Add-ins: For extra flavor, add a pinch of garlic powder, a dash of Worcestershire sauce, or a sprinkle of caraway seeds.
