Roast Beef with Potatoes and Carrots Recipe
Ingredients
- 3-4 lb beef roast (chuck or round)
- 4-5 medium potatoes, peeled and cut into chunks
- 3-4 carrots, peeled and sliced
- 1 onion, quartered
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tbsp olive oil
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp dried thyme
- 1 tsp rosemary (fresh or dried)
- Optional: fresh parsley for garnish
Instructions
- Preheat the Oven:
- Preheat your oven to 325°F (165°C).
- Sear the Roast:
- In a large oven-safe pot or Dutch oven, heat olive oil over medium-high heat. Season the roast with salt and pepper, then sear it on all sides until browned (about 4-5 minutes per side). Remove from the pot and set aside.
- Sauté the Vegetables:
- In the same pot, add the onion and garlic. Sauté for a few minutes until softened. Add the potatoes and carrots, stirring to combine.
- Add the Roast:
- Place the seared roast back into the pot, nestling it among the vegetables.
- Add Broth and Herbs:
- Pour the beef broth over the roast and vegetables. Sprinkle thyme and rosemary on top.
- Roast in the Oven:
- Cover the pot and place it in the preheated oven. Roast for about 3-4 hours, or until the beef is tender and easily pulls apart with a fork. Check occasionally and add more broth if needed.
- Serve:
- Once done, remove the pot from the oven. Let the roast rest for about 10 minutes before slicing. Serve the beef with the potatoes and carrots, spooning some of the broth over the top. Garnish with fresh parsley if desired.
