Scottish Rumbledethumps

Rumbledethumps is a traditional Scottish dish, often enjoyed as a comforting side or main course. It’s a mix of mashed potatoes, cabbage, and onions, all baked together with a golden, cheesy topping. Simple and hearty, it’s perfect for a cozy meal!

Ingredients:

  • 2 cups mashed potatoes (about 4 medium potatoes)
  • 1 small head of cabbage, finely chopped
  • 1 large onion, finely chopped
  • 2 tablespoons butter
  • 1/2 cup shredded cheddar cheese (plus extra for topping)
  • 1/4 cup milk (or cream for a richer texture)
  • Salt and pepper to taste
  • 1/4 teaspoon ground nutmeg (optional, for extra flavor)

Instructions:

1. Prepare the Cabbage and Onion:

  • In a large pan, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  • Add the chopped cabbage to the pan and cook, stirring occasionally, until the cabbage is tender, about 8-10 minutes. Season with a pinch of salt and pepper.

2. Mash the Potatoes:

  • While the cabbage and onion are cooking, prepare your mashed potatoes if they aren’t already made. Mash the potatoes with the milk (or cream) and season with salt and pepper. For extra flavor, you can add a little bit of butter or a pinch of ground nutmeg.

3. Combine the Ingredients:

  • Once the cabbage and onion are cooked, add them to the mashed potatoes and stir to combine. Add in the shredded cheddar cheese and mix it through until it’s melted and everything is well blended.

4. Transfer to Baking Dish:

  • Preheat your oven to 375°F (190°C).
  • Transfer the mashed potato, cabbage, and onion mixture into a greased baking dish (a 9×9-inch dish works well). Spread it evenly.

5. Top with Cheese:

  • Sprinkle extra shredded cheddar cheese on top of the mixture to create a cheesy, golden crust when it bakes.

6. Bake:

  • Place the dish in the preheated oven and bake for 20-25 minutes, or until the top is golden and bubbly.

7. Serve:

  • Once done, remove from the oven and let it cool for a few minutes. Serve hot as a delicious side or a comforting vegetarian main.
