Here’s a classic recipe for Shepherd’s Pie, a hearty dish perfect for a comforting meal!

Shepherd’s Pie

Ingredients:

For the Filling:

  • 1 lb (450g) ground lamb or beef
  • 1 onion, diced
  • 2 carrots, diced
  • 2 cloves garlic, minced
  • 1 cup frozen peas
  • 1 tablespoon tomato paste
  • 1 cup beef broth
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Olive oil for cooking

For the Mashed Potatoes:

  • 2 lbs (900g) potatoes, peeled and cubed
  • 1/2 cup milk (or cream)
  • 4 tablespoons butter
  • Salt and pepper, to taste

Instructions:

  1. Prepare the Mashed Potatoes:
    • Boil the peeled and cubed potatoes in salted water until tender (about 15-20 minutes). Drain and return to the pot.
    • Add the milk and butter to the potatoes. Mash until smooth and creamy. Season with salt and pepper to taste. Set aside.
  2. Cook the Filling:
    • In a large skillet, heat a tablespoon of olive oil over medium heat. Add the diced onion and carrots, cooking until softened (about 5-7 minutes).
    • Add the minced garlic and cook for another minute.
    • Add the ground lamb or beef, cooking until browned. Drain excess fat if necessary.
    • Stir in the tomato paste, beef broth, Worcestershire sauce, thyme, and season with salt and pepper. Let it simmer for about 5 minutes. Add the frozen peas and mix well.
  3. Assemble the Pie:
    • Preheat your oven to 400°F (200°C).
    • Spread the meat mixture evenly in a baking dish. Top with the mashed potatoes, spreading them out evenly and creating peaks for a crispy texture.
  4. Bake:
    • Bake in the preheated oven for about 25-30 minutes, or until the top is golden brown and crispy.
  5. Serve:
    • Let it cool for a few minutes before serving. Enjoy your delicious Shepherd’s Pie!

  • Variations: You can add herbs like rosemary or parsley for extra flavor or use other vegetables like corn or green beans.
