Ingredients:

  • 1 lb (450g) breakfast sausage
  • 2 cups (250g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup (240ml) milk
  • 1/2 cup (120ml) vegetable oil
  • 2 large eggs
  • 1 cup (100g) shredded cheddar cheese
  • 1/4 cup (30g) chopped green onions (optional)

Instructions:

  1. Prepare the Sausage:
    • Preheat your oven to 375°F (190°C).
    • In a skillet over medium heat, cook the sausage until browned and fully cooked. Break it into small pieces as it cooks. Drain any excess fat and set aside to cool slightly.
  2. Prepare the Muffin Batter:
    • In a large bowl, whisk together the flour, baking powder, salt, and black pepper.
    • In another bowl, whisk together the milk, vegetable oil, and eggs until well combined.
    • Pour the wet ingredients into the dry ingredients and mix until just combined.
    • Fold in the cooked sausage, shredded cheddar cheese, and chopped green onions (if using).
  3. Bake the Muffins:
    • Line a muffin tin with paper liners or grease it with cooking spray.
    • Divide the batter evenly among the muffin cups, filling each about 3/4 full.
    • Bake in the preheated oven for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  4. Cool and Serve:
    • Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
    • Serve warm or at room temperature.
