Strawberry Cheesecake Donut Holes

Ingredients:

For the Donut Holes:

  • 2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 large egg

For the Cheesecake Filling:

  • 4 oz cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Coating:

  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 cup strawberry jam or fresh strawberry sauce (optional for a fruity glaze)

Instructions:

1. Prepare the Donut Holes:

  • Preheat your oven to 350°F (175°C). Grease a donut hole pan or a mini muffin tin if you don’t have a donut hole pan.
  • In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
  • In a separate bowl, whisk together the milk, melted butter, vanilla extract, and egg until smooth.
  • Add the wet ingredients to the dry ingredients and stir until just combined. The dough should be thick but slightly pourable.
  • Carefully spoon the batter into the donut hole pan, filling each cavity about 3/4 of the way full.

2. Bake the Donut Holes:

  • Bake for 8-10 minutes or until the donut holes are golden brown and a toothpick inserted into the center comes out clean.
  • Once baked, allow the donut holes to cool for a few minutes before transferring them to a wire rack.

3. Make the Cheesecake Filling:

  • While the donut holes cool, make the cheesecake filling by combining the softened cream cheese, powdered sugar, and vanilla extract in a bowl. Use a hand mixer or a whisk to beat until smooth and creamy.
  • If the filling is too thick, you can add a little more powdered sugar or a splash of milk to reach a smooth consistency.

4. Stuff the Donut Holes:

  • Once the donut holes are cool enough to handle, use a small knife or piping tool to create a small hole in the center of each donut hole.
  • Pipe or spoon a small amount of cheesecake filling into each donut hole.

5. Coat the Donut Holes:

  • In a small bowl, mix the granulated sugar and cinnamon (if using) to make the coating.
