Ingredients:
- 2 lbs beef chuck roast, cut into 2-inch cubes
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 3 carrots, sliced
- 3 celery stalks, sliced
- 2 cups beef broth
- 1 cup red wine (optional)
- 2 tablespoons tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 bay leaves
- Salt and pepper to taste
- 2 tablespoons all-purpose flour (optional, for thickening)
- Fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Ingredients:
- Season the beef cubes with salt and pepper.
- Sear the Beef:
- In a large Dutch oven or heavy pot, heat the olive oil over medium-high heat.
- Add the beef cubes in batches and sear until browned on all sides. Remove and set aside.
- Cook the Vegetables:
- In the same pot, add the chopped onion, garlic, carrots, and celery. Cook for about 5 minutes, until the vegetables start to soften.
- Deglaze the Pot:
- Add the red wine to the pot, if using, and scrape the bottom to release any browned bits. Cook for 2-3 minutes to reduce slightly.
- Combine and Simmer:
- Return the seared beef to the pot.
- Stir in the beef broth, tomato paste, thyme, rosemary, and bay leaves. Bring to a boil.
- Simmer the Beef:
- Reduce the heat to low, cover the pot, and let it simmer for about 1 hour and 15 minutes, or until the beef is tender.
- Thicken the Sauce (Optional):
- If you prefer a thicker sauce, mix the flour with a bit of water to create a slurry. Stir this into the pot and cook for an additional 5 minutes until the sauce thickens.
- Serve:
- Remove the bay leaves.
- Garnish with fresh parsley and serve hot.
