Three-Cheese Tomato Bruschetta Dip 🧀🍅

Creamy, cheesy, and loaded with fresh tomato-garlic bruschetta flavors, this baked dip is the ultimate crowd-pleaser for parties, game day, or a cozy night in! Serve with toasted baguette slices or crackers for dipping.

Ingredients

For the Bruschetta Topping:

  • 2 cups diced Roma tomatoes (seeds removed)

  • 3 cloves garlic, minced

  • ¼ cup fresh basil, chopped

  • 1 tbsp balsamic vinegar

  • 1 tbsp olive oil

  • ½ tsp salt

  • ¼ tsp black pepper

For the Cheese Layer:

  • 8 oz cream cheese, softened

  • ½ cup sour cream

  • 1 cup shredded mozzarella

  • ½ cup grated Parmesan

  • ½ cup ricotta cheese

  • 1 tsp Italian seasoning

  • ½ tsp garlic powder

  • ¼ tsp red pepper flakes (optional)

For Serving:

  • Toasted baguette slices

  • Crackers or crostini


Instructions

  1. Prep the bruschetta:

    • In a bowl, mix tomatoes, garlic, basil, balsamic, olive oil, salt, and pepper. Set aside to marinate.

  2. Make the cheese layer:

    • In another bowl, beat cream cheese and sour cream until smooth.

    • Stir in mozzarella, Parmesan, ricotta, Italian seasoning, garlic powder, and red pepper flakes.

  3. Assemble & bake:

    • Spread the cheese mixture into a greased 9-inch baking dish or cast-iron skillet.

    • Spoon the bruschetta topping evenly over the cheese.

    • Bake at 375°F (190°C) for 18-20 mins until bubbly and lightly golden.

  4. Broil (optional):

    • For extra browning, broil for 1-2 mins (watch closely!).

  5. Serve warm with toasted baguette slices or crackers.
