Ultimate Ermine Frosting (The $300 Frosting) 🎂🍰

Ermine frosting, also known as cooked flour frosting, is a classic frosting with a rich and smooth texture, perfect for cakes and cupcakes. Ingredients:

  • 1 cup whole milk
  • 5 tablespoons all-purpose flour

Instructions:

  1. Make the Flour Paste:

    • In a medium saucepan, whisk together the milk and flour. Heat the mixture over medium heat, whisking constantly until it thickens to the consistency of pudding (about 3-5 minutes).
    • Once thickened, remove the saucepan from the heat and set aside to cool to room temperature.
  2. Cream the Butter and Sugar:

    • In a stand mixer (or with a hand mixer), beat the butter and granulated sugar on medium-high speed until light and fluffy, about 5-7 minutes. The butter should be creamy and pale in color.
  3. Add the Flour Mixture:

    • Once the flour mixture has cooled to room temperature, add it to the creamed butter and sugar, a little at a time, while continuing to beat on medium speed.
    • Add the vanilla extract and beat the mixture until smooth and fluffy. The frosting should have a silky, velvety texture.
  4. Frost Your Cake or Cupcakes:

    • Once the ermine frosting is smooth and fluffy, spread it generously onto cakes, cupcakes, or cookies. It’s ideal for layered cakes, as it holds up beautifully and is not too sweet.

Tips:

  • Temperature: Make sure the flour mixture is fully cooled to room temperature before adding it to the butter and sugar. If the mixture is too warm, it could cause the butter to melt, resulting in a less stable frosting.
  • Storage: If you have leftover frosting, store it in an airtight container in the fridge. It can be kept for up to 5 days. To use it again, bring it back to room temperature and re-whip it to restore the texture.
  • Customization: Feel free to add flavor extracts like almond, hazelnut, or lemon to suit your cake’s flavor profile.
