Apple Pie Biscuits

Ingredients:

For the Biscuits:

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup cold unsalted butter, cubed
  • 3/4 cup buttermilk (or regular milk with 1 tablespoon vinegar)

For the Apple Filling:

  • 2 cups apples, peeled and diced (about 2-3 apples)
  • 1/4 cup brown sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch (optional, for thickening)

For the Glaze:

  • 1 cup powdered sugar
  • 1-2 tablespoons milk or cream
  • 1/2 teaspoon vanilla extract

Instructions:

  1. Prepare the Apple Filling:
    • In a bowl, combine the diced apples, brown sugar, cinnamon, nutmeg, lemon juice, and cornstarch (if using). Mix well and set aside to let the flavors meld.
  2. Make the Biscuit Dough:
    • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
    • In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar.
    • Add the cold butter and cut it into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
    • Stir in the buttermilk until just combined. Do not overmix.
  3. Assemble the Biscuits:
    • Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat it into a rectangle about 1-inch thick.
    • Cut out circles using a biscuit cutter or a glass (about 3 inches in diameter). Place half of the circles on the prepared baking sheet.
    • Spoon a tablespoon of the apple filling onto each of those circles. Top with another circle of dough, pressing the edges to seal. You can also use a fork to crimp the edges for a decorative touch.
  4. Bake:
    • Bake in the preheated oven for about 15-18 minutes, or until golden brown.
  5. Prepare the Glaze:
    • While the biscuits are baking, whisk together the powdered sugar, milk, and vanilla extract until smooth. Adjust the consistency by adding more milk or powdered sugar as needed.
  6. Glaze the Biscuits:
    • Once the biscuits are done baking, let them cool for a few minutes. Drizzle or brush the glaze over the warm biscuits.
