📝 Ingredients

  • 2 salmon fillets (about 6 oz each)
  • 1 cup cherry tomatoes, halved
  • 1/2 block (about 4 oz) feta cheese, crumbled
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tsp dried oregano (or 1 tbsp fresh)
  • 1/2 tsp red pepper flakes (optional, for heat)
  • 1/2 lemon, juiced
  • Salt & black pepper to taste
  • Fresh basil or parsley for garnish

👩🍳 Instructions

1️⃣ Preheat oven to 375°F (190°C).
2️⃣ Prep the salmon: Pat fillets dry, season with salt, pepper, and a squeeze of lemon juice.
3️⃣ Assemble: In a baking dish, mix cherry tomatoes, garlic, olive oil, oregano, red pepper flakes, and half the feta. Place salmon on top.
4️⃣ Add remaining feta: Sprinkle the rest of the feta over the salmon and tomatoes.
5️⃣ Bake: 18-20 mins, or until salmon flakes easily (internal temp should reach 145°F/63°C).
6️⃣ Garnish & serve: Drizzle with extra olive oil, lemon juice, and fresh herbs.
