  • 1 small red onion, finely chopped
  • 2 cloves garlic, minced
  • 1-2 jalapeño peppers, seeded and finely chopped (adjust to taste)
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 1 tsp ground cumin
  • 1/2 tsp salt (or to taste)
  • 1/2 tsp black pepper
  • 1 tsp sugar (optional, to balance acidity)
  • 1/2 cup canned corn (optional)
  • 1/2 cup black beans, rinsed and drained (optional)

Instructions:

  1. Prepare Vegetables:
    • Dice the tomatoes and finely chop the red onion, jalapeño peppers, and cilantro.
