Blueberry Fluffy Cottage Cheese Cloud Bread Recipe

Ingredients:

  • 3 large eggs, separated
  • 1/2 cup cottage cheese, blended until smooth
  • 1/4 teaspoon cream of tartar
  • 1/2 teaspoon salt
  • 1 tablespoon cornstarch or arrowroot powder (optional, for structure)
  • 1 teaspoon honey or a pinch of sweetener
  • Optional: 1/4 cup fresh blueberries (or more if you like it fruitier!)

Instructions:

  1. Preheat and Prepare:

    • Preheat your oven to 300°F (150°C).
    • Line a baking sheet with parchment paper or a silicone baking mat for easy removal.
  2. Separate the Eggs:

    • Carefully separate the egg whites from the yolks, placing the whites in a large bowl and the yolks in a separate smaller bowl.
  3. Blend Cottage Cheese:

    • Blend the cottage cheese in a blender or food processor until it’s smooth and creamy. This will help create the fluffy texture in the bread.
  4. Make the Egg White Mixture:

    • Add the cream of tartar to the egg whites. Using a hand mixer or stand mixer, beat the egg whites on high speed until stiff peaks form. This will take a few minutes, and you should see the egg whites holding their shape when you lift the beaters out.
  5. Prepare the Egg Yolk Mixture:

    • To the egg yolks, add the blended cottage cheese, salt, cornstarch (if using), and honey (or sweetener). Mix them well until smooth and fully combined.
  6. Combine the Mixtures:

    • Gently fold the egg yolk mixture into the egg whites. Be careful not to deflate the egg whites; fold until everything is just combined.
  7. Add Blueberries:

    • Gently fold in the blueberries (if using). If you’re worried about the blueberries making the bread soggy, you can toss them lightly in some flour or cornstarch to help prevent that.
  8. Shape and Bake:

    • Spoon the mixture onto the prepared baking sheet into round mounds or shape it into small circles, depending on your preference (aim for 6-8 small pieces). They should resemble little fluffy clouds!
    • Bake in the preheated oven for 25-30 minutes, or until golden brown and firm to the touch. The bread should have risen and have a light, fluffy texture.
  9. Cool and Serve:

    • Allow the cloud bread to cool for a few minutes before serving. It will firm up as it cools.
    • Serve warm or at room temperature.

Serving Suggestions:

  • Enjoy as is for a light snack or breakfast.
  • Use it as a low-carb sandwich bread or burger buns.
  • Pair with your favorite jam, cream cheese, or nut butter for a sweet treat.
  • Top with additional fresh berries or a dollop of whipped cream for extra flavor.

This Blueberry Fluffy Cottage Cheese Cloud Bread is a fun and delicious way to enjoy a healthier, lighter bread alternative! It’s soft, fluffy, and the addition of blueberries makes it both fruity and satisfying. 🍞🫐
