Buckeyes are a classic candy from Ohio, inspired by the Buckeye tree, known for their chocolate-covered peanut butter centers. These bite-sized treats are easy to make and perfect for holiday gifts or a sweet snack.

Ingredients

  • 1 ½ cups creamy peanut butter
  • 4 cups powdered sugar
  • 1 ½ cups graham cracker crumbs (or crushed digestive biscuits)
  • 1 teaspoon vanilla extract
  • 2 cups semisweet chocolate chips
  • 2 tablespoons vegetable oil or shortening (for smoother chocolate coating)

Instructions

1. Make the Peanut Butter Centers:

  • In a large bowl, combine the peanut butter, powdered sugar, and graham cracker crumbs. Mix well until the ingredients are fully combined and a dough-like consistency forms.
  • Add the vanilla extract and continue mixing until smooth.

2. Shape the Buckeyes:

  • Roll the peanut butter mixture into 1-inch balls and place them on a parchment-lined baking sheet. Use your hands to gently roll them into smooth, round balls.
  • Insert a toothpick into each ball to help dip them later and chill the balls in the freezer for about 30 minutes to firm up.

3. Melt the Chocolate:

  • In a heatproof bowl, melt the chocolate chips and vegetable oil or shortening. You can melt it in the microwave in 30-second intervals, stirring between each interval, or melt it using a double boiler.

4. Coat the Peanut Butter Balls:

  • Once the peanut butter balls are firm, remove them from the freezer.
  • Dip each ball into the melted chocolate, leaving a small portion of the peanut butter exposed at the top to resemble a “buckeye.” Use the toothpick to help with dipping.
  • Gently tap the toothpick to allow any excess chocolate to drip off, and place the dipped candy back on the parchment-lined sheet.

5. Chill and Set:

  • Once all the buckeyes are coated, chill them in the fridge for at least 1 hour, or until the chocolate has hardened.

6. Serve:

  • Once the chocolate has set, remove the toothpicks, and your Buckeyes are ready to enjoy!

Tips:

  • Storage: Store the buckeyes in an airtight container at room temperature for up to 1 week or in the refrigerator for longer shelf life.
  • For a smoother coating: Add a bit more vegetable oil or shortening to the chocolate to get a glossy finish.
