Ingredients:

For the Fritters:

  • 500g cabbage, grated
  • 2 onions, finely chopped
  • 3 garlic cloves, minced
  • 3 eggs
  • 4 tablespoons flour (60g)
  • 1 teaspoon salt (8g)
  • 1 teaspoon ground red pepper (4g)
  • 1 teaspoon black pepper (4g)
  • Vegetable oil for frying

For the Sauce:

  • 3 tablespoons yogurt (75g)
  • 2 stalks of dill, chopped
  • 1 cucumber, grated
  • Red pepper powder to taste (optional)

Instructions:

1. Prepare the Fritter Mixture:

  • Grate the cabbage: Grate the cabbage into fine strips and place it in a large mixing bowl.
  • Add onions and garlic: Add the finely chopped onions and minced garlic to the bowl with cabbage.
  • Season: Stir in the salt, ground red pepper, and black pepper to the mixture.
  • Add eggs and flour: Crack in the eggs and add the flour. Mix everything together until well combined. The mixture should be thick enough to hold together but not too dry. If needed, add a little extra flour to achieve the right consistency.

2. Fry the Fritters:

  • Heat oil: In a frying pan, heat enough vegetable oil over medium heat to cover the bottom of the pan.
  • Form fritters: Take spoonfuls of the cabbage mixture and shape them into small patties. Carefully place them in the hot oil.
  • Fry until golden: Cook each fritter for about 3-4 minutes on each side, or until they’re golden brown and crispy.
  • Drain excess oil: Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.

3. Prepare the Sauce:

  • Make the sauce: In a small bowl, combine the yogurt, chopped dill, grated cucumber, and red pepper powder (if using). Stir everything together until smooth. Adjust the seasoning with a pinch of salt or more red pepper powder to taste.

4. Serve:

  • Serve the fritters: Serve the warm cabbage fritters alongside the yogurt dill sauce for dipping. These make a great appetizer, side dish, or light meal.
